Origin:
The Siberian pine is also called Siberian cedar, grows up to 40 meters high and is spread between the Urals and the Pacific Ocean.
Characteristics and substances:
Cedar nut oil is particularly rich in unsaturated fatty acids (about 90%). Particularly, the pinolenic acid is a 2-unsaturated fatty acid which is not an omega-6 but omega-5 fatty acid. The cedar nuts also contain the vitamins B1, B2, niacin and above all vitamin E. Phosphorus, iron and lecithin are also included.
Applications:
The light yellow to gold or amber oil is less suitable for frying because of its low smoke point, but is used to "round off" the taste of food. With a nutty, spicy flavor it is particularly suitable in the kitchen for cold dishes such as salads, raw food and fruit dishes.
