Origin:
The Cupuaçu tree (Theobroma grandiflorum) is a small to medium-sized rainforest tree that grows up to 20 m in height. The melon-sized fruits ripen in the rainy months January to April. The cupuaçu fruit contains between 30 and 50 seeds, from which the butter is obtained by careful mechanical pressing.
Characteristics and substances:
Due to its balanced fatty acid composition, Cupuaçubutter is a fat that is solid at room temperature. The main fatty acid is oleic acid (C18: 1, omega-9) followed by stearic acid (C18: 0). Also included are palmitic acid (C16: 0) and arachidic acid (C20: 0) and behenic acid (C22: 0). Contains phytosterols, especially beta-sitosterol and natural vitamin E.
Applications:
Due to its high water absorption capacity Cupuaçubutter is well suited as an emulsifier for creams.
